100% Organic, Disease-resistant, Fair-Trade Cacao Beans: The best cacao comes from the Dominican Republic and Costa Rica. In the Dominican Republic, they grow the much-coveted Hispaniola bean. Its flavor profile is unique among traditional cacao beans. Representing a very small part of the nation’s crop, it’s grown only in the valley around San Francisco de Macoris and on the hills near Hato Mayor. Harvesting is done by hand and is labor-intensive.
Cacao pods are carefully cut down using large knives on long poles. These pods are collected in baskets, split open, extracted by hand, and placed in wooden boxes for 6-8 days where they’re turned occasionally for even fermentation, followed by another week of sun-drying. The Hispaniola cacao bean takes significantly more labor than other beans, which you will no doubt appreciate.
Sugar-Free: ApriSweet Dark Chocolate is sugar-free. It uses a sweetener that comes from the Stevia plant. Stevia is 200x sweeter than cane sugar, so we use less of it. A lot less. Our Stevia is organic, and is more scarce than other forms of Stevia. It has zero calories and when it’s used as a replacement to sugar, results in lower insulin levels.
Gluten-Free: Gluten is used as an emulsifier or thickener. It is found in wheat, barley, and rye. If you have celiac disease or gluten sensitivity it can make you sick to your stomach so no gluten here.
No GMO (Also No Dairy, No Soy): A GMO is a living organism whose genetic material has been altered in a lab. Many crop seeds are being genetically modified under the guise of combatting starvation, but they’re so problematic (serious human and animal health dangers, herbicide tolerance, low crop yield) that it’s very hard to find the good through all the bad. Our co-branding partner/developer works with their farmers to protect crops from GMO contamination.
