Apricot Ginger Frozen Yogurt
Still have a little bit of summer left, and what better way to enjoy the warm sunny days than with this frozen yogurt recipe by our recipe contest winner Hidemi Walsh! Our Dried Apricots are the perfect snack, even better when added to this summer treat! Give it a try!
Ingredients:
- 12 pieces dried apricots
- 1/2 cup water
- 2 tablespoons Honey
- 3/4 teaspoon Ground ginger
- 1 cup Plain Greek yogurt
Directions:
- Chop dried apricots finely and put into a saucepan with water, ginger, and honey. Cook over medium heat stirring occasionally until water is absorbed. Remove the saucepan from the heat and let cool to room temperature.
- Transfer the apricot mixture into a bowl. Add yogurt and mix to combine.
- Put the mixture into a freezer-safe container with a lid and freeze until frozen (2-3 hours).
